Lions Mane Pakora

Serves 5-6 - Prep Time 20 mins - Cook Time 20 mins

An effortlessly tasty and versatile dish that can be served as an appetiser, main meal or mind boosting snack. Lions Mane have studied mind improving qualities and is quickly becoming our favourite protein at meal time.


INGREDIENTS

500gm Lions Mane Mushroom, torn into bite size nuggets

1 cup chickpea flour

2 tsp cumin

1 tsp turmeric

1 tsp smoked paprika

1 tsp garlic salt

salt & pepper, to taste

up to 1 cup water, till batter is combined

1/2 cup greek yoghurt

1/4 cup mint, chopped

1/2 lemon, juiced

oil for deep fryer (or air fry)


METHOD

1. Tear Lions mane into bite sized nuggets and set aside.

2. In a mixing bowl add chickpea flour, cumin, turmeric, smoked paprika, garlic salt, pepper and whisk until combined well.

3. Slowly add water to achieve a runny batter, between 1/2 cup - 1 cup then allow batter to rest for 2-3 minutes

4. Add torn Lions Mane nuggets and coat thoroughly in chickpea batter until completely covered.

5. Heat fryer according to settings and fry for 3-5 mins

6. While frying mix greek yoghurt, mint and lemon in a small bowl until combined.

7. Once Lions are cooked to a golden brown, allow to rest for a minute on absorbent paper, before serving with mint yoghurt.

Serve with Greens to turn this snack into an indulgent main meal.
