King Oyster Pulled Mushroom Sliders

Our simple pulled mushroom sliders are the perfect alternative to its popular pork counterpart. Sweet barbecue flavours with a hint of spice that is balanced perfectly with the fresh slaw and tangy pickles.


INGREDIENTS

300gm King Oyster Mushrooms, shred with a fork

6 slider buns, toasted

1/2 tsp cayenne pepper

1 tsp smoked paprika

salt & pepper, to taste

olive oil, splash

2 cloves garlic, crush & died

1 medium brown onion, finly diced

1/2 cup stock

1/4 cup barbecue sauce

2 cups green cabbage, thinly sliced

2 cups purple cabbage, thinly sliced

2 medium carrots, grated

1/4 cup parsley, thinly sliced

1 tsp cumin

salt & pepper, to taste

1/4 cup olive oil

1 garlic clove, crushed

1/2 lemon, juiced

4-6 pickled, sliced lengthways


METHOD

1. Shred King oyster mushrooms with a fork, reserving caps for another meal.

2. In a bowl add shredded king oyster, cayenne pepper, paprika, s&p and toss to combine. Set aside.

3. In a pan on medium-high heat, add olive oil, onion and garlic and cook until translucent.

4. Add shredded King Oyster Mushrooms and stir occasionally for approx 5min then add stock and simmer for 10 mins or until reduced.

5. While sauce is cooking, prep ingredients for slaw, including dressing and slicing pickles.

6. Once pulled mushrooms and stock have reduced stir through barbecue sauce until combined and cook a further 2-3 mins.

7. Toast slider buns and then its time to assemble.

8. Starting with slaw, then stack pulled mushrooms and pickles on top and enjoy!
